What could be better than a traditional butter biscuit? A butter biscuit with almond of of course! keep on reading to learn how to make these simple and delicious biscuits.
You will need:
80g flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
60g unsalted butter, softened but still cool
32g brown sugar
32g granulated sugar
32g natural almond butter
2 large eggs
1/2 tsp vanilla
32g almonds, finely chopped (optional)
Instructions:
Line a baking tray with parchment paper.
Preheat oven to 200°C (180°C for fan assisted oven/gas mark 6)
Combine flour, baking soda, baking powder, and salt. Set aside.
Beat butter in separate bowl until creamy. Add sugars to butter, beating until fluffy, (approximately 3 minutes) then beat almond butter into butter mixture until incorporated.
Beat in vanilla and then eggs, one at a time into butter mixture.
Gradually stir in the dry ingredients, stirring to combine.
Add ground almonds and stir until just incorporated.
Roll cookies into 2 Tbs sized balls and place onto prepared baking sheet, generously spaced and press each ball twice with a fork to make a crisscross design.
Bake cookies for 10-12 minutes.
Edges should be slightly browned and the cookies puffed.
Cool on sheets for 4 minutes before transferring to a cookie cooling rack.
